Good starter book, but not likely to convert tradional chefs - Suzi Hough - San Jose, CA United States
I liked that this book introduced me to new ideas about the microwave. I honestly never thought about using it to cook fish or make rice; as far as I was concerned microwaves re-heat and that's about it. I am glad that the book at least opened my horizons, so if I'm stuck in a situation where all I have is a microwave, I can whip up something more interesting than prepackaged frozen dinners.

The book has a lot of information about microwaves in general, including their history and things to watch for when deciding what size will be best for your needs.

From the recipes I tried, I am not convinced that microwave cooking is any better - or even on the same level - as the more traditional methods of cooking. Often, the recipes didn't seem to save much time, and they were rather bland...but that's good, in a way. It keeps your options open for customizing flavor to your individual tastes. I was a little disappointed that there weren't photos for the many recipes, but a lot of them are so basic you don't really need to see how the food looks.

I think this is a great book for new chefs or students who don't have access to great kitchen facilities, but experienced cooks who enjoy traditional food preparation will not be impressed.

How To Convert Recipes to Present Day Microwave Powers - Jason Morgan -
Plenty has been said about how great this book is. I purchased the hardcover edition in 1987 and when it came out in paperback I purchased 20 copies and gave them to friends as gifts. In those days microwave wattage was 650 - 700 watts. Today the average wattage on a microwave is 1200 - 1300 watts.

I cook all the recipes in the book at 70% power in my 1300 watt microwave and that does the trick. No need to adjust the times, just the power level to approximate the lower wattage ovens. Experiment with your oven. If 70% power is too hot, try 60%. Alternatively try 80% power if foods are not getting done. Once you reach the right power setting, all the recipes will work for you.

Cooking by a microwave

Microwaves are now a part of every household kitchen. In the presence of a busy lifestyle, a microwave is an effective alternative, because time is reduced due to the preparation of meals for about two thirds as compared to the traditional method of food preparation and cooking.

While heating the food, there's really no guarantee that food will prove to be well prepared when you take from the oven. "Cold spots" or uncooked Sections perhaps because of an irregular microwaves enter the oven evident. Due to the uneven flow of the waves, the food absorbs the heat unevenly.

Defrosting

Food that was purchased frozen light, the supermarket must be made of plastic are first removed from its case before the furnace. The same goes for those that have been packed with foam. The heat melts the cover page and, if their chemical transport> Food, making it unsafe to eat already.

Do not forget the meat or poultry to cook when you have finished thawing in the oven. Although the process of thawing has also started heating cook some parts of the body, and not all pieces are full. harmful bacteria are still some areas that has not absorbed a normal amount of heat.

Kitchen

As some time ago, what has been said, the microwave does not distribute the right amount of heat perComponent of food. If you cook food to be inside the oven, you should arrange the dimensions according to their food.

For example, large pieces of meat put together in the oven, then bake at medium heat for first. Do not cook in high performance immediately. The best thing to do to keep the heat on only half of it and extend the cooking time, so the heat will be distributed gradually to all partsMeat.

You can also rotate the food in a little 'to prevent the occurrence of cold spots.

Heat

If a food has been cooked and is warming up, just remember to cover it or put in a container that is microwave-friendly. This includes pots, such as glass, ceramic and plastic containers, which are also known to be used in microwave.

Do not use containers that are destined for the cold, because it will dissolve onceIt is put in the oven. An example is margarine or butter tub. The chemicals that this type of container is in your food contamination only.

Once the food is hot, is now in the oven, stirring bit 'more heat. Remember to always put the lid back whenever you are finished with shaking.

Follow these tips to ensure that food is safe to eat, too. Also be sure to provide your microwave so that the instructionsYou can still find time to do everything you have concerns regarding the preparation and cooking times. Remember, the microwaves are cool if you know how to use it.

Before microwave activity is greater at the edges, not in the center. Pieces of food should not be placed on the edge of the container. Not for modern microwaves - S. Kessler -
This book was a great disappointment. First of all, it is written by a British author and calls for many ingredients and has many recipes that are not well suited for the American kitchen. But most important, it is written using 750 watt ovens as the standard. This is such an old standard. I installed a microwave in October and it is 1200 watts. What a difference that makes. I thought the book was recently published, but it turned out that it was really older than I thought, as the paperback edition publishing date Amazon provides is misleading.

What I don't understand is why there are no recent cookbooks for the microwave. Every book I've perused seems to be more than 10 years old. You'd think someone would write an up-to-date book as a comprehensive guide to the many things you can cook in a microwave (believe me, I've experimented since I got mine). But that doesn't seem to be the case.
