If you have ever wondered, a scientist said that his food, here's the answer. Harold McGee's "on food and cooking: The Science and Lore of the Kitchen" is a 900 page behemoth filled to the brim with excellent information. Its charm lies in its simplicity, the depth of knowledge, but highly readable. This book is for everyone, from seasoned chefs to cook at home on grass.

The best place to start with this book is the final chapter, "TheFour basic food molecules "and the short appendix entitled" A Chemical Primer. "Baker for all information on this is essential. I know, I know you never miss book to finish by the end of it! But these two sections will help you a solid base so that the rest of the book, a piece of cake (and a great pleasure) is inscribed.

From there, find an open world for you to be like soy sauce, as egg whites make it hard whenwrought. This is not just a cookbook but a reference point for all matters connected with cooking ever dream of. Your way through this book is how to draw the veil on the wonders that lie behind the banal in the diet. If you are serious about cooking food at all, or if preferred just interested in learning more about your, the book is a must have. It is an indispensable reference book, yes, but more that this is a fascinating andmagical read.

Good starter book, but not likely to convert tradional chefs - Suzi Hough - San Jose, CA United States
I liked that this book introduced me to new ideas about the microwave. I honestly never thought about using it to cook fish or make rice; as far as I was concerned microwaves re-heat and that's about it. I am glad that the book at least opened my horizons, so if I'm stuck in a situation where all I have is a microwave, I can whip up something more interesting than prepackaged frozen dinners.

The book has a lot of information about microwaves in general, including their history and things to watch for when deciding what size will be best for your needs.

From the recipes I tried, I am not convinced that microwave cooking is any better - or even on the same level - as the more traditional methods of cooking. Often, the recipes didn't seem to save much time, and they were rather bland...but that's good, in a way. It keeps your options open for customizing flavor to your individual tastes. I was a little disappointed that there weren't photos for the many recipes, but a lot of them are so basic you don't really need to see how the food looks.

I think this is a great book for new chefs or students who don't have access to great kitchen facilities, but experienced cooks who enjoy traditional food preparation will not be impressed.

Seems to work for weight loss; maintenance may be another story - Steven A. Peterson - Hershey, PA (Born in Kewanee, IL)
I tried the Atkins' diet once and lost twenty pounds--and promptly gained half of that back. Good for weight loss. Not so sure about maintenance. I saw a lot of friends try it and lose a lot of weight and then some time later, most of them were status quo ante. . . . Still, this volume provides a good set of Atkins' recipes and is a fine resource if one wishes to try the diet. . . .

The Preface to the 2004 edition notes that the Atkins' diet had, in essence, gone "mainstream." It also noted Dr. Robert Atkins' passing in 2003. A central part of this diet is the low carbohydrate dictum. Helpful to any reader will be the listing of acceptable foods at the end of the volume (pages 209-215).

Since this is a cookbook, though, the key question is how good the recipes are. Let's take a look at a sampling of recipes and get a sense of what is at stake here. First, an example of an Atkins' diet soup, French Onion Soup Gratinee (I love a messy French onion soup!). Ingredients: olive oil, onions, reduced sodium chicken broth, dry sherry, Worcestershire sauce, bouillon, Parmesan cheese, salt and pepper, and Swiss cheese grated. Begin by browning onions in olive oil; stir on chicken broth, sherry, Worcestershire sauce, and bouillon cube. Bring to boil and then reduce to simmer. Add parmesan cheese, salt, and pepper and simmer a bit longer. Move to ovenproof serving bowls, put Swiss cheese on top and broil until cheese is brown and melted. This differs from the standard recipe that I use, but it is doable.

One example of a nice easy salad recipe is Greek Salad. Mix together vinegar, salt, and pepper as dressing. Add tomatoes (cut up), cucumbers, feta cheese, onion, olives, and toss well. Top with the dressing and enjoy!

A protein source? Scallops Meuniere. Heat olive oil until hot--but not smoking. Add scallops until they're golden brown. Transfer browned scallops to a dish to be kept warm. Then, add butter to the pan. Stir in lemon juice, dry white wine, parsley and shake the pan. Then, season with salt and pepper. Pour sauce over scallops and eat the dish.

And so on. Again, for the most part, the recipes are quite doable. I have tried a handful and found the recipes to produce good tasting food. I have not yet committed to returning to the Atkins' diet--but I will take advantage of this volume as a cookbook, whatever the case!

    This is the perfect cookbook for someone who has never cracked an egg before. It gives you tips on what to do if you are lacking in supplies, the recipes are open ended so it is difficult to do a poor job with a recipe, and it includes commentary so it feels less like an instruction manual and more like a guide. It was a great gift for a friend of mine who assumed it was impossible to cook in college. This is not a good cookbook for people with a firm grasp on cooking. The wording will irritate anyone with experience.

    I bought this as a gift for my mom, who is Argentinian. Barcelona is a restaurant with several locations in southern CT. I lived in CT and was a frequent visitor to their restaurants. Excellent food, and these recipes are straight from their menu.

    This is probably a better book for those younger cooks out there interested in making bento or highly popularized Japanese cooking. It's simple and the manga style cartoon instructions are easy to follow. I would have preferred more realistic pictures or photos of the food to better guage proportions but it was a cute read nevertheless.

    The Sugar Busters! diet lets you eat just about anything except certain carbohydrates, including refined sugars, red and white potatoes, corn, white rice, highly processed grains, beets, and carrots. This cookbook offers a variety of Sugar Busters!- acceptable recipes, averaging about 40 percent "correct" carbohydrates, 30 percent protein, and 30 percent fat. These recipes won't keep you in the kitchen all day, though most aren't produced in a flash, either. Breakfasts are predominantly egg dishes. Lunches include Stir-Fried Ginger Chicken, Chesapeake Crab Cakes, Whole-Wheat Spaghetti with Olive-Tomato Sauce, Fourth of July Macaroni Salad (colorful with red onions, tomatoes, green bell peppers, and onions), and Bayou Spicy Boiled Shrimp. Dinner entrées emphasize meat, fish, and poultry, with some regional and international dishes. The collection also includes separate recipe sections for vegetables, appetizers, salad dressings, sauces, and holiday dishes.

    Many recipes are high in fat, especially saturated fat, such as Green Chilies Cheese Casserole, which uses six large eggs and four cups of grated cheese to eight ounces of green chilies. No nutritional breakdown is provided, so if you're trying to keep your fat intake to 30 percent, you'll have to guess. The authors suggest finishing the meal with "dessert of a simple green salad coated with a subtle olive oil and milk herb dressing or a few bites of cheese" or "a few nuts."     I had gotten this book form my grandmother after I moved-out on my own and thought it was pretty good for my beginning cooking skills. Now, 21 years later, and after re-purchasing it after it was lost in a move, it is too basic for my much-improved cooking skills. The recipes are good and easy to do but they probably won't do much for someone with cooking experience. For the beginner, a son/daughter who has just moved-out or maybe even as a wedding present for a couple who now have to cook for each other without much experience in doing so, this would be a good gift.
