Pad Thai noodles
Ingredients
175g flat rice noodles
3.5 tbsp sunflower oil
12 raw shrimp with tails left on skins peeled
2 cloves garlic, sliced
Core half red pepper, sliced
2 medium eggs, beaten
3 tablespoons fish sauce (nam PAI)
Juice of one lime
1 tablespoon light muscovado sugar
4 tablespoons roasted cashews
6Spring onions sliced diagonally
50 g bean sprouts
Method:
Bake as instructed by the first envelope Drain the pasta and toss with half a tablespoon of oil.
2. Heat the remaining oil in a large skillet. The shrimp and saute for a minute and a half. Add the garlic and chili pepper and add another 30 seconds.
3. Pour the beaten eggs and fry until they start to rise then reduce heat. Add pasta, fish sauce, lime juicesugar and run a minute, then the cashews, green onions and bean sprouts launch for another minute, then serve immediately.
