From Down Home with the Neelys: Sweet and Spicy Slaw

Pat: In Memphis, if you run a barbecue joint, you better have coleslaw on your menu and it better be good (ours is some of the very best). Indeed, you could spend a day in Memphis tasting slaw from rib joints all over town. And yet there are people who visit our fair city who are hesitant to try it, especially folks from the West Coast. This is a mystery to me. Coleslaw and pulled pork go together like lettuce and tomatoes on a burger, and salted peanuts in a bottle of pop (I bet some of you haven’t tried that, either).

Bottom line: You come down Memphis way, you have to try our slaw. When we started Neely’s, Tony and I recognized the importance of slaw and knew we would have to come up with a killer recipe, one that would complement our sandwiches and our sauce. It had to be sweet yet spicy, because our barbecue sauce was truly mild. We also wanted it to be coarse and fresh (with a little onion flavor, and carrots for color). A big key for us was using two types of pepper, black and cayenne, which work together as well as Tony and I do. Then came some sugar, as sweet as my Gina. All of these ingredients have given us a coleslaw we are very proud of. For years in the restaurant this was my dish—no one made it for either location but me. I didn’t use measuring cups; everything was done by feel. As we grew, I knew I would eventually have to develop it into a standard recipe so others could make it. Now we have customers who come in and buy slaw by the bucket to take home and have with their catfish, spaghetti, or whatever they are cooking. This recipe will convert even those West Coast hard-liners who claim they “don’t eat slaw.”

Gina: On our show, we like to tease that Pat is the sweet and I am the spicy (only my man knows for sure!). At Neely’s restaurants, the famous and addictive coleslaw happens to be both. We often double this recipe for parties, because leftovers are so delicious (and a food processor makes quick work of all that shredding). When making this slaw at home, it’s a good idea to use both red and green cabbage. It’ll give your slaw more color. Be sure to select the freshest, best-looking cabbage available for the prettiest, crispest, and crunchiest coleslaw you have ever tasted.

Ingredients

  • 1 small head green cabbage
  • 1 small head red cabbage
  • 4 carrots
  • 1 medium yellow onion
  • 1/2 cup mayonnaise
  • 1/4 cup prepared yellow mustard
  • 2 teaspoons apple-cider vinegar
  • 1 cup sugar
  • 1 teaspoon freshly ground black
  • pepper
  • 1/2 teaspoon cayenne pepper
  • Kosher salt

(Serves 6 to 8)

Directions

Cut the cabbages into quarters and remove the cores. Peel the carrots and onion, and slice them into pieces that will fit through the feed tube of a food processor. Fit the food processor with the large-holed grater attachment, and push the cabbage, carrots, and onion through the feed tube to grate. In a large bowl, toss the grated cabbage, carrots, and onions to combine.

In a medium bowl, whisk together the mayonnaise, mustard, vinegar, sugar, black pepper, and cayenne (whisk until the sugar is dissolved). Toss the dressing with the coleslaw, and season with salt and additional pepper to taste. Cover the slaw with plastic wrap, and chill for at least 2 hours before serving.

Too busy at work and too tired to cook? Although we may be cooking like a case of cooking and a pain, if for a job 12 hours per day, children and absolutely there is no time to prepare the ingredients. I have a new baby q gas grill, and am reading alot of grilling books. I like the Weber book better, this has some strange advice....buying from the salad bar becuse you won't take a minute to cut up a carrot or zuchinni?
These cooks ignore calories! It feels very much like midwest cooking, heavy on sauces with sugar, if you are grilling to be healthy or lose weight this may not be the book for you.
I did get three usefull ideas, fish in foil! and grilled sandwhiches, and a new the falafel. I like the book, but not enough to keep it.
also the assumption of indirect heat and charcoal,,,, but cook on !

Great Big Book Full of Great Recipes - Darena Dorsey - The South, USA
I was so excited when I received this cookbook. I have a few other soup cookbooks but they each feature about 100 recipes. This one has a whopping 375 recipes. The book is a nice, large, hardback. It doesn't have glossy pages or pictures of the food but I will swap that for the shear volume of recipes included in this book.

The book features recipes starting with soup mixes which I've always kind of used soup mixes when I made homemade soup anyway, they add alot of flavor but this book uses soup mixes to make all kinds of recipes. That was something that I didn't realize when I purchased the book. Who knew that you could make cheesecake with Campbell's Soup? The vegetable and bread recipes are just as delicious as the soup recipes in the book.

Great book. Highly recommend.

I suffer from rheumatoid arthritis and was diagnosed a year ago. I finally decided to look for alternative medacine when my doctor wanted to increase the dosage of my medacine and add another medacine even though I was feeling perfectly fine. I was taking methotrexate, predisone, and hydroxychloroquine. I read about this book and the mcdougal diet and checked it out from my local library. After starting a low fat veagan diet (mcdougal diet) and eliminating problem foods (conquering arthritis)I was pain free in six days!! I have now been on the diet for 27 days and am 98% pain free There are stil problem foods that i need to identify but i have not done the fast recommended in the book yet. I definitely recommend this book and look for it in your local library so you can try it without buying it. Also recommend the mcdougall diet lost 11 lbs in the 27 days so far went from 126 to 114 lbs!

Echoing the complaints about the type color - Mom Central - Davis, CA USA
I love this cookbook. The recipes are not overly complicated, but they are good enough that I would happily serve them to company. The variety is tremendous. The breakfast foods alone make it worth the price, in my opinion. However, I hate to *read* this cookbook, because the type is so light in comparison to the page, that it's extremely difficult (and that's in my well-lighted kitchen!) I really have trouble with the orange type in particular. (The ingredients are generally given in orange type.) Plus, I worry that the type is going to fade even more over time. I like the book so much I've even thought about buying it for my Kindle, but Kindle has its own problems converting lists and graphs, so I've avoided doing that for now.

Great book, ridiculous price - Ronn & Jan Harding - Marietta, GA
I've relied on this book for years and years. I'm recommending it to a relative who needs to lose weight. But I have to wonder why Amazon prices range from nearly to around for either new or used! That's way out of line. I've also seen a WW soft cover cookbook that was priced over , when the original cost was maybe . These are good, but they're not rare classics!
