La Cucina: The Regional Cooking of Italy

La Cucina: The Regional Cooking of Italy

gotoshop

Product Details

Fifty years ago, a group of Italian scholars gathered to discuss a problem: how to preserve traditional Italian cooking. They formed the Italian Academy of Cuisine to document classic recipes from every region. The academy’s more than seven thousand associates spread out to villages everywhere, interviewing grandmothers and farmers at their stoves, transcribing their recipes—many of which had never been documented before. This is the culmination of that research, an astounding feat—2,000 recipes that represent the patrimony of Italian country cooking. Each recipe is labeled with its region of origin, and it’s not just the ingredients but also the techniques that change with the geography. Sprinkled throughout are historical recipes that provide fascinating views into the folk culture of the past. There are no fancy flourishes here, and no shortcuts; this is true salt-of-the-earth cooking. The book is an excellent everyday source for easily achievable recipes, with such simple dishes as White Bean and Escarole Soup, Polenta with Tomato Sauce, and Chicken with Lemon and Capers. For ease of use there are four different indexes. La Cucina is an essential reference for every cook’s library.

La Cucina is great. No photos other than a very useful map with regions. I would have like to seen a few photos, the book is timeless it is maybe the most in depth Italian cookbook I have come across yet. They have provided two index columns, the region index is just as useful as the "principal ingredient" index.

Window on the wine world - Sacramento Book Review - Sacramento, CA
Kevin Zraly has been teaching his Windows on the World wine course for 34 years, and has graduated almost 20,000 students. He took a great deal of the information from his course, and wrote a book that is a self-guided version. Now, twenty-five years later, comes the latest edition, updated, yet again, with new wines, wineries, and regional information from around the world. It is a wonderfully conversational book, with plenty of asides one can almost imagine being told by Zraly as he digresses from course material. There are tasting note and instructions on blind tasting and a quiz at the end of each chapter. The sidebar notes are almost extensive enough to form their own sub-chapter of information, though, often, it is just factoids or short lists.

A highly enjoyable guide to the world of wine, both for beginner and intermediate wine lovers.

3 Great Tips to Cook Nice Food at Home

America has some fantastic restaurants with great food but you don't need to pay top dollar to eat top meals. It is more than realistic to cook these restaurant meals in the comfort of your own home for a fraction of the cost. Great food can be had at home if you go about it the right way. Below are the three essential steps to creating great food in the comfort of your own home.

1. Get the right recipe. The internet is your friend when it comes to finding recipes. They are literally everywhere. Whatever you feel like cooking there is probably a recipe for you. First decide on your base recipe, chicken is always a good bet because you can do anything with it. Then hit Google and start searching!

2. Plan ahead. Like many things in life the key to successful cooking is in the preparation. Clean your surfaces and go shopping! There is nothing worse than getting half way through a dish and realizing you don't have all the Ingredients. Check the closet, not just try to remember. In order to have the ingredients and everything is placed on work surface. Make a first cut, so you can always focus on the timing right.

Enjoy Yourself third. Cooking is fun, believe it or not. Create from scratch, and everything that you can enjoy in your home. Cook for as many people as you can and you get better practice makes perfect. The only bad bit 'tidying up afterwards.
